Fresh peaches and a missed birthday = peach upside down cake :)

In July I missed Alex's Birthday so to make up for it I decided to put together a little birthday treat, which was timed with a delivery of fresh peaches from TN so I made a peach cake and we boy did we enjoy it :) but i have to be careful so I only get a slice if I have enough points left after dinner.



A few people have asked for a recipe to make this so here is the one I normally use, (I have to be honest and say the one pictured is actually just a yellow cake mix).

To make you will need:

• 1/2 cup firmly packed brown sugar
• 1 3/4 cup all purpose flour
• 1 teaspoon baking powder
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• 3/4 cup skim milk
• 2 tablespoons canola oil
• 1 1/2 teaspoon vanilla
• 1/4 cup egg substitute (if your not watching your weight then real eggs work better)
• 1 1/2 cup peeled fresh peaches, chopped

Preheat oven to 350°F.

line 9 inch cake pan with wax paper and place peach slices on the bottom ready to have the cake mix poured over them.

In a bowl, combine flour, brown sugar, baking powder, baking soda and salt, mixing well.

In another bowl, combine oil, milk, vanilla and egg substitute, blending well.

Add to the flour and sugar mixture; stir just until moistened.

Fold in chopped fresh peaches.

Spoon batter into prepared cake pan.

Bake at 350°F for around 30 minutes until top is lightly browned.

A slice is 6 WW points.
